The following recipes were demonstrated on Fox News channel Q13, Seattle, by Chef Gabriel, June 30, 2010. Link to vedio following a brief advertisement. vedio 2c organic cream Add vanilla bean, lavender, and cream to pot and bring to simmer. Steep 15-20 minutes. In a bowl add the egg and yolks. Add honey to the cream mixture and stir until dissolved. Strain mixture and temper into eggs. Pour into 4 oz ramekins and bake in bain marie (water bath) for 45-55 minutes at 300F. Custard should be set and jiggle slightly when moved. Chill in refrigerator for 2-4 hours. Brulee just before serving with sugar. Lavender-Cassis Syrup for Kir Royale ½ c organic agave syrup Simmer all ingredients until currants are soft then strain pressing hard on solids to extract color and flavor. Cool and thin if needed with warm water. Splash a bit of syrup in the sparkling wine or white wine of your choice. Lavender Salmon Glaze Combine all ingredients in stainless steel pan and reduce to syrup, about 5-7 minutes. This is a Bistro Bite.
