bistro bites

The following recipes were demonstrated on Fox News channel Q13, Seattle, by Chef Gabriel, June 30, 2010. Link to vedio following a brief advertisement. vedio

Lavender Vanilla Crème Brulee

2c organic cream
2t lavender
1 vanilla bean
½ c local honey
pinch salt
4 yolks
1egg
1/2c organic cane sugar

Add vanilla bean, lavender, and cream to pot and bring to simmer. Steep 15-20 minutes. In a bowl add the egg and yolks. Add honey to the cream mixture and stir until dissolved. Strain mixture and temper into eggs. Pour into 4 oz ramekins and bake in bain marie (water bath) for 45-55 minutes at 300F. Custard should be set and jiggle slightly when moved. Chill in refrigerator for 2-4 hours. Brulee just before serving with sugar.


Lavender-Cassis Syrup for Kir Royale

½ c organic agave syrup
¼ c water
2T lavender
1 c fresh currants

Simmer all ingredients until currants are soft then strain pressing hard on solids to extract color and flavor. Cool and thin if needed with warm water. Splash a bit of syrup in the sparkling wine or white wine of your choice.


Lavender Salmon Glaze
½ c organic soy
½ c local honey
½ c sherry
1 c balsamic honey vinegar
1T lavender

Combine all ingredients in stainless steel pan and reduce to syrup, about 5-7 minutes.
Brush salmon with glaze before, 1-2 times during, and after cooking.
