Immersion Circulator?! What's That?

It's Chef Gabriel's newest kitchen tool. Developed in the 70's by the French, it is a precise low-temperature cooking instrument known as sous vide, meaning under vacuum. Food, such as fresh Steelhead, is vacuum sealed with olive oil, herbs and garlic in food-grade plastic and immersed in a temperature controlled water bath. This method yields exquisite texture, even doneness, and moist, succulent results.

We will use the immersion circulator for both Christmas Eve and New Year's Eve special menus.

 


 


What's New?
Chef Gabriel is excited to have found better products that fit in with our ethos. We now are getting Umpqua Valley whole lamb from Oregon. This means he gets to play with interesting and different cuts and you get to enjoy his new found creativity. Also, the lamb is ranched closer than the Shepard's Pride (Colorado, Utah, Montana) that we used to carry. It too is free-range, hormone and antibiotic free. Go Local!

Draper Valley chicken from Mt. Vernon, now has a completely organic line from which we are proud to purchase for your eating pleasure. Not just free-range, no-hormones or antibiotics, but organic too.

Our friends Carl & Kathy from Bubble Heads adventure the deep for delicious sea urchin and sea cucumber for us!

Stasteelum Kul Oyster & Sea Urchin (Uni) Duo A delectable local treat.

Also, Stasteelum Kul oysters from Jamestown Tribe in Sequim Bay rival kumamotos (some of the best oysters in the world) for their firm and creamy texture and briny clean finish.

We created a new wine and beer list for the holidays. Local beer maker Tom Martin thinks this is the best batch of Alder Wood Smoked Oat Stout that he has made yet! Now on tap. There are some amazing new glass pours and some extra special bottles added for you to choose from, such as Shafer Relentless, Moscato Giallo, Barbolini Lambrusco, Woods Lake Due Anni and more.

In January we will be getting super local Tamworth hogs from Canyon Creek Farms. So, look forward to the best pork you'll find throughout our specials sheets in February.

Contributing to a Healthier Local Community; Now Featuring Kangen Water

We are proud to be using Kangen water in our restaurant. Now, all of our clients and staff receive the extra benefits of Kangen water through our drinking water, coffee/tea, and soup. Kangen water is made on site from our Kangen machine. Water passes through ionized plates which alkalizes and micro-clusters the water, making it not only taste great but better for you.
